I normally drink bottled water in Egypt but on my last visit I used the tap water for hot drinks and when visiting the family home we drank water from the fridge that was from the tap and were fine. My favourite street food has to be felafel mmmmmmm

I love falafel

I have 2 packet mixes left in my kitchen - (on the packet it says made in the SHAMIA way - I dont know know what this means?) -

however, my little dilemma is :

do I make the remaining falafel for me, or for my guests??

Shamia refers to Sham or more formally Bilad As-Sham - which is the region of Syria, Leb, Palestine,Jordan - a lot of the cases it refers to Syria.
